For example if you have multiple different points of sale devices, you could keep your product and customer information structured with Umbraco and use Headless to allow the data to be served to your various devices

Umbraco comes in two parts, the Umbraco part and the website part. What you need for point of sales devices, smart watches is just the website part and the data from the Umbraco part. Heartcore provides this.
